You should be able to use PostIdent, which is identification at the post office. They accept a lot more passports.
Some documents are not accepted for authentication due to their lack of security features. This should include older Italian documents.
At last I couldn’t activate the Sim card. I also went to the post office and they told me that my documents can not be accepted because they are in paper. So I tried to go to an O2 shop to explain the situation, and they were surprised because they supposed that my documents could work. Unfortunately they couldn’t activate my Sim in the shop.
Are there any other possibilities to activate this card? I can’t wait for new documents since this will take some months and I need a German number now (with some data but not too expensive).

That is not possible, because the card is pre-activated (at order time) and a shop can not complete the registration.
Sorry, but there is no way to activate an o2 prepaid card, if your document is not accepted.
