I am exisitng customer with Mobile contract and Home landline internet, I have recently added a new Partner card in O2, now there are new offers for PArtner card with PS5, I would like to update my Simcard only PArtner contract with PS5. Is that possible?

Unfortunately, this is not possible. If you are still within the 14-day cancellation period, then withdrawal the new contract and make a new one with that PS 5 offer.
Otherwise, you can only add the PS5 in a contract extension to get a discount. An extension is possible after a contract period of 6 months.
