I was planning to buy an Apple Watch Series 8 with Cellular and was trying to find out about tariffs for an eSim. Is it possible to extend my currently existing number onto my Apple Watch and use the same tariff or would I have to buy a completely new dedicated tariff for my watch?

Good choice that you want to use you new Apple Watch with eSIM.
What contract do you have? If your contract allows it, you can order a multicard as an ESIM with your number for your Apple Watch.
Please note that you have to order the eSIM via the watch app on your iPhone.
